Roasted Garlic & Sweet Potato Soup Recipe

Slurp yourself leaner and healthier with this roasted garlic and sweet potato soup that is easy to make and perfect for freezing so you’ve always got yummy back-up food for a late night.

 

Ingredients

  • 1 head of garlic
  • 2 tsp black pepper
  • 1 tsp salt
  • 1 1⁄2lb golden sweet potatoes, peeled and diced
  • 2 tbsp coconut oil
  • 2/3 cup chopped yellow onion
  • 4 cups low-sodium chicken broth
  • 1 cup light buttermilk

 

Method

Step 1: To roast the garlic, cut off the top and sprinkle with one teaspoon of black pepper and half a teaspoon of salt. Wrap in foil. Bake at 425°F for 40 minutes.

Step 2: After garlic is roasted, add coconut oil to large saucepan. Over high heat, add onion and roasted garlic cloves. Stir occasionally, mashing the garlic cloves as well. Fry in the coconut oil for two minutes.

Step 3: Add one cup chicken broth and oat flour to coconut oil/onion mixture. Mix well. Add remaining ingredients to saucepan, adjusting remaining chicken broth for desired consistency. Bring to boil. Cover, and reduce the heat to low or medium for 35 minutes.
