Energizing Ginger Spice Pumpkin Soup

Pumpkins are a fantastic source of all your energy-yielding B vitamins and iron, making this pumpkin soup an ideal food to eat before dinner, a run or a bike ride.

 

You’ll Need

  • 15oz pure pumpkin purée
  • 1cup low-sodium vegetable broth
  • 1⁄2 tsp minced ginger
  • 1 tsp black pepper
  • 1⁄4 tsp nutmeg

 

Method

Step 1: Add all ingredients to medium saucepan and bring to boil, stirring frequently.

Step 2: Reduce heat to low-medium, simmering for an additional five minutes.

Step 3: Serve soup warm or cold.
