Chocolate Caramel Muffins Recipe

Muffins are the ultimate convenience food. Packed with protein, these chocolate caramel treats make a delicious breakfast, dessert, snack or side.

 

You’ll need

2/3 cup MuscleEgg chocolate caramel flavor egg whites

1/3 tsp baking powder

1/3 tsp baking soda

Pinch or two of powdered peanut butter

1-2 tsp sweetener of your choice

Cinnamon and pumpkin spice to taste

Optional frosting

A dollop of non-fat Greek yogurt

A scoop of strawberry protein powder or sweetener of your choice

 

Method

1. Preheat oven to 375°F.

2. Mix dry ingredients in a large bowl. Add the egg whites and whisk together. Add a teaspoon of almond milk as you whisk to fluff up the mixture.

3. Equally divide into three or four muffin tins and bake for 15 minutes or until a toothpick comes out clean.

4. While the muffins are in the oven, combine Greek yogurt and protein powder or sweetener and beat until smooth.

5. Let the muffins cool, then add frosting or eat them as they are.
