Spicy Chicken Fried Quinoa Recipe

A delicious take on quinoa that’ll leave you lusting for more. Make it and stash it in your bag for all-day goodness that’ll help you build muscle and burn fat.

Serves 5

You’ll Need

  • 1lb ground chicken breast
  • 3 eggs
  • 2 cups low-sodium chicken broth
  • 1 cup raw quinoa (to yield a little over 2 cups cooked quinoa)
  • 1 cup frozen edamame beans
  • 1 cup chopped carrots
  • 1/2 cup chopped red onion
  • 1 tbsp minced garlic or garlic paste
  • Coconut oil spray

Sauce:

  • 2 tbsp Bragg Liquid Aminos or coconut aminos
  • 2 tbsp Sriracha (hot sauce)
  • 1 tbsp ginger paste
  • 1 tbsp low-sodium teriyaki sauce (optional, but recommended)

 

Method

Step 1: Cook the quinoa according to the instructions on the package, but use low-sodium chicken broth instead of water – or a cup of chicken broth and a cup of water. Set the quinoa aside and allow it to cool to room temperature.

Step 2: Mix the ingredients for the sauce together in a small bowl.

Step 3: Set a nonstick skillet on a medium heat and spray with coconut oil. Add the garlic, carrots and red onions. Cook until the onions become clear. Toss in the ground chicken and completely cook it. Use a wooden spoon or spatula to chop it up.

Step 4: Increase the heat of the skillet to medium-high, add the cooked quinoa and stir. Before you do; make sure the quinoa has cooled and it’s “dry” (or not carrying a lot of moisture).

Step 5: Pour in the sauce and stir quickly so it doesn’t burn. Add eggs to the skillet, then stir and chop so that the egg spreads evenly throughout the mixture. Reduce the heat to medium, add the frozen edamame beans and stir until the beans are completely thawed.

Step 6: Divide into five portions and serve with a fruit-filled salad.
