If you’re a lover of heat but don’t fancy the extra calories, try this flavor-rich take on the burger from Joe Sexton, a nutritional advisor and star of Fit In The Kitchen.

You’ll need

500g ground turkey

1 egg yolk

Ground cumin

Chili powder

Ground coriander

Garam masala

Curry powder

Smoked pimentón

4 cloves of garlic, finely chopped

2 onions – 1 finely chopped, 1 sliced

Jar of passata

Wholemeal seeded bun

Wholemeal flour

1 tsp oil

2-3 slices of tomato

Method

Step one

In a large bowl mix the ground turkey, garlic, half a teaspoon each of curry powder, cumin and pimentón, one egg yolk and some salt and pepper. Shape the mixture into three patties. On a medium heat, fry off the burgers in a little oil for as long as it takes your onion and sauce to get ready.

Step two

Using a small amount of oil, fry off the sliced onions and add half a teaspoon each of cumin, coriander, garam masala and a pinch of chili powder. Gently fry the onions until brown. Onions are rich in chromium, which keeps your blood pressure in check.

Step three

In the pan, add a little water and a tablespoon of flour to thicken the mixture. Place it in a dish lined with baking parchment and oven cook on 350F (180C) until crisp and brown. The spices will stoke your metabolism, while lowering inf ammation.

Step four

For the sauce, gently fry o the diced onions and garlic in oil. After a few minutes, add a teaspoon each of cumin, curry powder, coriander, garam masala, smoked pimentón and chili powder. Fry off for a few minutes, making sure not to burn the spices. Add the passata and simmer gently until the burgers are done.

Step five

Cut the bread and assemble a very tasty burger. Leftovers are perfect for lunches, and can be added to salads for a lean snack that is easily transported anywhere.
