Two Chicken Soup Recipes To Cure A Cold

Chicken soup is well known for being a wonderful health booster as well as gloriously tasty.

Firstly, it’s a fluid and hydration is key when you’re feeling under the weather. It’s also warm which will help clear your sinuses with steam. Chicken soup serves to help strengthen your body when it’s drained of energy thanks to the lean protein in chicken and the nutrients from the veggies.

Carrots contain beta-carotene and celery has vitamin C, both of which bolster the immune system and fight infection.

Here, MACROS gives you two chicken soup recipes to play with: a traditional version and a high-fibre recipe with quinoa.

 

Quinoa Chicken Soup Recipe

Quinoa is making it’s soup debut. It has both fiber and protein to help you feel fuller for longer. It’s also rich in manganese, which will keep your bones strong.

 

You’ll Need

  • 2 1⁄2 cup slow-sodium chicken broth
  • 3⁄4 cup red quinoa
  • 1⁄2 cup chopped carrots
  • 1⁄2 cup chopped celery
  • 1/3 cup chopped red bell pepper
  • 1/3 cup peas
  • 1 tsp dried parsley
  • 1 tsp dried oregano
  • 1⁄2 tsp black pepper
  • 1⁄2 tsp garlic salt
  • 1lb shredded chicken, cooked

 

Method

Step 1: Add all ingredients (excluding chicken) to large saucepan. Combine well.

Step 2: Bring to a boil. Cover, and reduce heat to low- medium, simmering until vegetables and quinoa are cooked thoroughly, which should be approximately 20 minutes.

Step 3: Add chicken to pot and cook uncovered for an additional five minutes.

Traditional Chicken Soup Recipe

Chicken soup is famously good for the soul and this traditional bowl of nutritional goodness is bound to make you feel better.

 

You’ll Need

• 2-3 shallots, diced

• 1 leek, diced

• 1 cup diced carrots

• 2 celery stalks, diced

• 1 bunch fresh coriander

• 1 tbsp lime juice

• 300g chicken thighs

• Chilli flakes

• 300ml bone broth

• 200ml water

 

Method

Step 1: Preheat a large pot on a medium heat.

Step 2: Add all the ingredients to the pot and cook for 45 minutes, but be sure the chicken is cooked through.

Step 3: Season well with salt and black pepper for a hearty meal that’ll heal your soul and injuries.
