Which Root Vegetables Should You Be Eating?

While the weather may be rainy and blustery above ground at this time of year, root vegetables are flourishing under the earth, safely nestled in the soil.

This family of vegetables range from yams, carrots and garlic to ginger, parsnips and turnips. They’re wonderfully versatile so there’s plenty of room for creativity in the kitchen. For instance, parsnips are great roasted, served as chips or used to bulk out curries, casseroles and stews, while beetroot is delicious roasted and paired with creamy ingredients like goat’s cheese, blended in a soup - borscht is a classic winter warmer in Eastern Europe – or even drunk as a juice.

Thanks to their subterranean existence, these veggies absorb plenty of nutrients from the soil and are consequently bursting with antioxidants, Vitamins C, B, A, and iron, making them perfect for a detox as well as fighting the winter sniffles.
