Sweet Potato Pancakes Recipe

What’s better than pancakes? Sweet potato pancakes of course. Sweet potatoes are an excellent source of vitamin A as well as vitamin C, manganese, copper, pantothenic acid and vitamin B6.

They are a good source of potassium, dietary fiber, niacin, vitamin B1, vitamin B2 and phosphorus. In this healthy pancake alternative, the sweet potato holds the mix together while also adding a great flavour.

You’ll Need

200g cooked sweet potato

4 tbsp (30g) coconut flour

2 tbsp vanilla extract

½ tsp ground cinnamon

2 large eggs

¼ cup (2oz) unsweetened vanilla almond milk (or any other kind)

1 scoop (30g) protein powder (vanilla is good)

1 tbsp any sweetener

1 tsp baking powder

 

Method

Step 1: Add all of your ingredients into a bowl and mix everything together with a little salt (a hand mixer will make things easier if you’re leaving the skin on).

Step 2: Take out a stovetop pan or griddle, turn your burner on medium heat, and let it heat up

Step 3: Coat your pan or griddle with some non-stick cooking spray and pour however much mix you want onto it

Step 4: Cook each side for 2-3 minutes and repeat until your mix is gone.
