The best time to eat dessert is anytime. Rather than finish your day with it, start your morning with these delicious raspberry oatmeal protein bites.
Ingredients
- 4 tbsp (28g) almond flour
- 1 cup (80g) rolled oats
- 2 scoops (60g) vanilla protein powder (or my baking protein)
- 1/2 tsp baking soda
- 1/8 tsp salt
- 1/2 scoop (123g) apple sauce
- 1/4 cup your choice sweetener
- 1 tsp vanilla extract
- 4 tsp raspberry extract (optional)
- 4 tbsp (72g) raspberry jam
- Fresh raspberries
Method
Step 1: Mix together almond flour, rolled oats, protein powder, baking soda and salt.
Step 2: In another bowl, mix apple sauce, sweetener, vanilla extract and raspberry extract.
Step 3: Combine mixes.
Step 4: Coat a muffin or baking pan with non-stick cooking spray. Pour in most of mix. Press in.
Step 5: Evenly distribute jam & raspberries on top, then top with remaining mix. Press together.
Step 6: Bake on 350F (176C) for 15-20 mins or until brown.
