Turkey, Oat and Cheese Muffins Recipe

You’ve never had eggs, oatmeal and bacon quite like this before. Its the tastiest way you can fulfil your protein needs, even if the idea of turkey, oat and cheese muffins sounds bizarre!

Ingredients

  •  8 slices turkey bacon (leg meat, without nitrates, uncured)
  •  2 eggs
  •  1 egg white
  •  1/ cup skim milk
  •  1 cup reduced fat cheddar

Dry Ingredients

  •  2 cups oat flour
  •  1 tbsp baking powder
  •  1 tsp sea salt
  •  1/2 tbsp sage
  •  2 tbsp coconut oil
  • 1/4  red bell pepper, chopped
  • 1 cup chopped spinach
  • nonstick cooking spray

 

Method

Step 1: Set oven to 350ºF and place a nonstick skillet on medium high heat and toss in turkey bacon. To get crispier bacon without burning it, spray it with a little olive oil (or cooking spray) while it cooks in the skillet. When the bacon has finished cooking, chop it into pieces.

Step 2: If you don’t have oat flour, then you can easily make it. Simply place rolled oats in a blender or food processor and blend until you create flour.

Step 3: In a large bowl, mix together all of the dry ingredients with a fork, then toss in the remaining ingredients and mix together thoroughly using a spatula.

Step 4: Spray a muffin mold with nonstick cooking spray, then evenly divide the batter among the muffin molds.

Step 5: Bake in the oven for about 25 minutes, or until a toothpick comes out clean after you pierce a muffin.
