Tom Yum, a type of hot and sour Thai soup, is usually cooked with shrimp. It has big, bold flavours and is deliciously nourishing.
You’ll Need
• 1 garlic clove, chopped
• 2 fresh chillies, chopped
• 1 small handful fresh ginger, grated
• 1 tbsp tom yum paste
• 600ml bone broth
• 1 sprig lemongrass
• 200ml coconut milk
• 200g prawns
Method
Step 1: Cook the garlic, chilli, ginger and tom yum paste over a medium heat.
Step 2: Add the broth, lemongrass and coconut milk and boil for two minutes.
Step 3: Add the prawns, then remove the soup from the heat and leave until the prawns are opaque.
