Rabbit Wrapped With Iberian Ham Recipe

Although not a dish to serve animal lovers, this meal is bound to impress. A simple white meat similar to chicken, rabbit is one of the tastiest and abundant game meats out there, it’s also cheap and low in fat.

Wrapping the rabbit in Iberian ham adds an extra depth of flavor and the blue cheese will give it a creamy kick.

 

You’ll Need

  • 8 rabbit backstraps
  • 12 long slices Iberian ham
  • 100-200g blue cheese
  • 1-2 tbsp olive oil
  • Few handfuls white asparagus, blanched for five minutes
  • Peppercress, to serve

 

Method

Step 1: Preheat the oven to 180°C and grease a roasting tin.

Step 2: Trim any sinew off the rabbit, cover with plastic wrap and gently tenderise with a rolling pin. For each log, lay down three Iberian ham strips, then two tenderised backstraps side by side on top of the ham. Crumble a quarter of the blue cheese on top. Roll up into a log and tie with cooking twine.

Step 3: Heat the olive oil in a fry pan over medium heat and brown each log all over. Move to the tin, cover with aluminium foil and roast for 15 minutes.

Step 4: Meanwhile, grill the asparagus over a medium heat. Take the rabbit logs from the oven and slice. Serve on the grilled asparagus with a scattering of cress, a little pepper and a drizzle of olive oil.
