Protein-packed Peach Cobbler Recipe

Summer’s here and it’s the perfect time to enjoy a deliciously juicy and protein-packed peach cobbler from nutrition guide Samantha Ann Leete.

 

Ingredients

Filling:

  • 2 cups peaches, peeled/sliced or canned
  • 2 tbsp sweetener of choice
  • 1 tsp lemon juice
  • 1 tsp vanilla extract
  • 1⁄2 tsp cinnamon

Topping:

  • 2 scoops FitMiss Delight protein, vanilla chai flavor (or any other vanilla protein)
  • 1 cup oat flour, coarse ground *
  • 2 tbsp brown sugar
  • 2 tsp baking powder
  • 1⁄2 tsp salt
  • 3⁄4 cup unsweetened almond milk
  • 1 tbsp butter
  • Extra cinnamon for garnish

 

What to do

Step 1: Preheat oven to 350°F.

Step 2: For filling: In a large bowl, combine peaches, sweetener, lemon and vanilla together, making sure peaches are evenly coated. Set aside. Pour peach mixture into a greased baking dish or divide equally into a muffin tin and set aside.

Step 3: For topping: In a separate bowl, combine FitMiss Delight protein, oat flour, brown sugar, baking powder and salt, and then mix. Add almond milk and butter and continue to mix until batter is thick and smooth. Spoon a thin layer of batter over peaches and sprinkle with a dash of cinnamon

Step 4: Bake for 40-50 minutes or until topping is golden brown. Serve warm with optional fat-free Cool Whip.

 

*Oat flour is simple to make. Just take regular rolled oats and zap them in your blender until it looks like flour.
