High-protein Apple Pie Recipe

Apple pie just how grandma used to make it, but don’t need to wait until your cheat day to enjoy this sweet yet still healthy treat.

You’ll Need (serves 8)

  • 8 sheets filo pastry dough
  • 2 tbsp vegetable oil
  • 1/2 tsp cinnamon
  • 2 tbsp vanilla protein powder
  • 6 large crisp apples
  • 1 tbsp lemon juice
  • 60ml apple juice
  • 5 tbsp sugar
  • 2 tbsp cornstarch
  • 1 tsp vanilla

 

Method

Pastry

Step 1: Preheat oven to gas mark 4.

Step 2: Brush the pie plate with oil. Then mix cinnamon and protein powder with the remaining oil.

Step 3: Brush each piece of filo with the mixture.

Step 4: Cut a circle out of the sheets that is 5cm bigger in diameter than the pie plate.

Step 5: Save the scraps. Layer the circles into the pie pan lightly.

Step 6: Bake for five minutes.

Filling

Step 1: Peel, core and finely slice the apples.

Step 2: Cover with lemon juice.

Step 3: Add to a pot with a teaspoon of cinnamon and half of the apple juice.

Step 4: Place over medium heat and simmer for five minutes, then add sugar.

Step 5: Add the vanilla and cornstarch to the remaining apple juice and mix.

Step 6: Simmer the apples for a further two minutes until the sugar has dissolved then add the mixture.

Step 7: Simmer another minute or two until liquid has thickened.

Step 8: Pour the apple filling into the prepared pie crust.

Step 9: Cover the apple filling with the filo scraps. Weave them if you’re feeling fancy but random shapes will do just as long as the filling is covered.

Step 10: Bake for 25 minutes.
