Pork Loin With Asian Dressed Slaw

Ingredients

Serves 4

600g pork loin

200g carrots

200g red cabbage

200g white cabbage

80g peanuts

8g fresh coriander

8g fresh mint

 

For the Asian dressing

60ml tamari

30g red chillies

15ml honey

15g spring onions

12g lemongrass

9g fresh coriander

9g fresh ginger

1 large clove of garlic

Instructions

1: Remove any fat or sinew from the pork loin. Season with salt and pepper. Then in a hot pan, pour in a splash of vegetable oil and brown the pork on all sides.

2: Place on a baking tray and place in a preheated 190C oven for 8-10 minutes for medium rare or 12 minutes for medium. Place to one side to rest and cool.

3: Place the peanuts on a baking tray and toast for 4-6 minutes at 190C. Blend to a crumble consistency in a food processor.

4: For the slaw, finely slice the carrots and cabbage using a mandolin or a sharp knife. Place in a bowl and add the fresh herbs.

5: For the dressing, place all the ingredients in a food processor and blend until combined. Pour the dressing over the slaw.

6: To serve: place the slaw in a bowl and top with slices of the pork and the crushed peanuts.
