If you have kids – or are just a kid yourself at heart – it’s not Christmas until you’ve created gingerbread men full of spicy goodness and decorated with questionable outfits.
This recipe uses protein powder and oatmeal for a healthy alternative to the traditional high fat gingerbread recipe.
So dig out your old cookie cutters and get creative!
Makes: 8-10 cookies | Prep: 10min | Cook: 6-8min
You’ll Need
300g instant porridge oats
125g Bio-Synergy coconut protein powder
1/4 teaspoon bicarbonate of soda
2 tsp ground ginger
1 tsp ground cinnamon
1 pinch salt
1/2 teaspoon vanilla extract (optional)
3 large eggs
50g brown sugar
40g butter
Decoration
American hard gums
Blue, white and pink icing
Method
Step 1: Preheat oven to 190 C / Gas 5
Step 2: Grind oats in a food processor until you get the consistency of flour (optional)
Step 3: Combine the oat flour with Bio-Synergy coconut protein powder, bicarbonate of soda and salt, and set aside
Step 4: Warm the butter in the oven or using a saucepan until almost liquid
Step 5: Whisk together the sugar, eggs, butter and vanilla. Add this to the oat flour and protein powder, and mix well
Step 6: Line a baking tray with baking paper and roll out the cookie dough on a smooth surface sprinkled with flour
Step 7: Use cookie cutters to shape your dough into gingerbread men – or any other figures you fancy – and line up them on the tray
Step 8: Bake in the oven for 6 to 8 minutes. Don’t overbake. Leave to cool for 5 minutes
Step 9: Decorate… and devour!
