Mini Sweet Potato Cake Recipe

When you need a break from clean eating and you’ve earned a cheat meal, this mini sweet potato cake recipe will ensure your treat is still packed with muscle-building protein.

Ingredients

  • 16oz sweet potato, or pumpkin
  •  3 large eggs, or 6 large egg whites
  • 1/2 cup unsweetened apple sauce, or 1 banana
  • 1/2 cup almond flour
  • 2 scoops vanilla protein powder
  • 6 tbsp coconut flour, or oat flour
  • 1 tsp vanilla extract
  • 2 tsp light brown sugar
  • 1 tsp ground cinnamon

Frosting

  • 4oz fat-free cream cheese
  • 1/2 tsp ground cinnamon
  • 5 1/2oz fat-free vanilla Greek yogurt
  • 2 tsp light brown sugar

 

Method

Step 1: Cook your potato. If you want to quickly cook it in the microwave all you have to do is peel it, poke it a few times with a fork, put it in the microwave for 31/2 minutes, flip it over and microwave it again for 31/2 minutes

Step 2: Add ingredients to a food processor and blend.

Step 3: Coat a pan or silicone cups with some nonstick cooking spray and evenly distribute your mix into them

Step 4: Bake on 175°C for 15-20 minutes

Step 5: Add the frosting ingredient to a bowl and mix. Top your cakes with it for a high-protein snack you can eat any time.
