There’s nothing more fun than cooking up a new, tasty protein dish, but this throws up its own set of problems – the worst being oxidation damage, especially in meat.
Luckily, there is a solution. The journal Meat Science found cooking garlic with your meat slashes oxidation in the protein in half, making sure you’re keeping the quality intact.
You’ll need
• ½ tbsp olive oil
• 450g beef or turkey
• 1 tsp garlic seasoning/powder
• 2-3 egg whites
• ½ cup pizza or pasta sauce (lowest sodium one you can find)
• 1 ½ cups mozzarella cheese (fat-free, reduced-fat or full fat work)
• Optional pepperoni slices, or any other toppings you prefer
What to do
Step 1: Take out a stovetop pan, add a little olive oil and brown your beef or turkey over medium-high heat. This should take around five minutes.
Step 2: Drain the meat if there’s a lot of juice.
Step 3: Coat a pie dish with non- stick cooking spray and add your browned meat, pressing down to shape your crust.
Step 4: Evenly distribute 2-3 egg whites into the crust. Add toppings.
Step 5: Bake on 350°F/176°C for 25-30 minutes, or until your cheese has melted.
