When life gives you lemons… make cookies! These delicious lemon chia protein cookies combine the tartness of the citrus fruit with sweetness while remaining super healthy and easy to make.
Ingredients
- 4 tablespoons (30g) coconut flour (or oat flour)
- 1 tablespoon (12g) chia seeds
- 2 scoops (60g) protein powder รยผ teaspoon salt
- 1 tablespoon lemon zest
- 1/2 teaspoon xanthan gum
- 2 tbsp (28g) coconut oil
- 1 large egg
- 1-2 tbsp your choice sweetener
- 2 tsp vanilla extract
- 2 tbsp (42g) honey
- 1/4 cup (2oz) lemon juice
Method
Step 1: Zest the lemon, and mix with all the dry ingredients in one bowl.
Step 2: Mix the sweetener and all of your wet ingredients into another bowl.
Step 3: Mix wet and dry ingredients until dough-like
Step 4: Shape your dough into cookies on a lined baking sheet and bake on
