Healthy Vanilla Cheesecake Recipe

Celebrate your gains with a creamy protein-packed slice of this healthy vanilla cheesecake. It requires just five ingredients and won’t leave you feeling guilty from overindulgence.

 

Ingredients

200g reduced-fat graham crackers

50g coconut oil

500g quark

500g extra-light cream cheese

100g vanilla casein powder

15g sprinkles (optional)

 

Method

1. Preheat the oven to 350ºF.

2. Pulverize the crackers in a blender – or put them in a bag and hit them with a rolling pin. Melt the coconut oil in the microwave for one minute, stir into the cracker crumbs until fully coated.

3. Press the mix into the bottom of an 8” loose-bottom cake tin as tightly as you can. Mix the quark, cream cheese and protein powder in a bowl until there are no lumps.

4. Pour the mix evenly on the biscuit base. Bake on a middle shelf for 30 min. If it begins to color, turn the oven down slightly. You still want the middle of your cheesecake to ‘wobble’ when you take it out of the oven, – it will set further once it’s chilled.

5. Allow the cheesecake to come to room temperature before chilling in the fridge for a minimum of four hours. Remove from the tin and finish with sprinkles on top.
