Sticking to a rigid diet 24/7 is not only mind-numbing but it can lead to such frustration that you abandon your regimen altogether.
In short, it’s a good idea to indulge in a few tasty yet healthy treats in order to trick your body into thinking you’re getting the cheat feast it craves.
This easy-to-make recipe for chocolate fruit and nut fudge comes from Guittard Chocolate. Perfect for sticking to your macros, it’s free from gluten, dairy and refined sugars.
The tasty concoction is made using coconut milk, whole nut butter and 100% Guittard Chocolate.
You’ll Need
500g 100% chocolate
250g coconut milk
50g honey/agave/natural sweetener in syrup form
100g whole nut butter
100g nuts
100g dried fruit
Method
Step 1: Line a 20cm x 20cm square tin with cling film and put to one side.
Step 2:Â Place the chocolate in heatproof bowl.
Step 3: Pour the coconut milk, sweetener and nut butter into a saucepan over a low heat, stir and allow it to reach a simmer.
Step 4: Pour over the chocolate and mix until melted and thoroughly combined.
Step 5: Fold in the chopped nuts and fruit, keeping a few bits back to place on top.
Step 6: Pour the mixture into a lined tin and top with remaining fruit and nuts.
Step 7: Place in the fridge and allow to set (overnight is preferable).
Step 8: Remove from the tin and discard the cling film before portioning the fudge into cubes and serving.
Step 9: This will keep at room temperature in airtight container for up to a week.
