Soup for the Soul: Global Chicken Recipes

Chicken soup might be good for you, but there are recipes that extend beyond grandma’s. Here’s some global inspiration…

 

Classic base

• 4-6 carrots

• 4 celery sticks

• 1 large onion

• 1 cloves garlic

• Shallot, diced

• 2 leeks

• 300ml chicken stock or broth

How

Dice up the ingredients and cook in a pot for 45 minutes. Simple, eh?


 

Make it… Asian

Add the following:

• 8g ginger

• 2 small red chillies

• 2 tbsp soy sauce

• 3 tsp brown sugar

• 1 bunch bok choy

 

How

Add the traditional ingredients, then lump these in with the rest as you cook it.

Add the following:

• 1 cup coriander
