10 Minute Meal: Vegan Muscle Wrap

Vegetarian wraps are for girls trying to slim down, right? Wrong!

They’re an easily transportable lunch that’ll slam gargantuan supplies of nutrients into your body without the high volumes of animal protein. These wraps are designed by strength coach and sports nutritionist Tom Holland from myvega.com to help athletes stay fuelled as well as super healthy.

You’ll Need

(Serves four)

• 1 bunch collard greens

• Salt, to taste

• 1 – 2 avocados

• Fresh medium salsa

• ½ cup hemp seeds

• ½ cup pumpkin seeds

• ½ cup sunflower seeds

• 2 tsp chili powder

• Salt, to taste

• ¼ red onion, thinly sliced

• ½-1 chili pepper, finely chopped

• Head purple cabbage, thinly sliced

• ½ bunch cilantro, chopped

• 1 lime, juiced

• 1 tbsp extra virgin olive oil

• 1 cup brown rice

 

Method

Step 1: In a food processor, combine the hemp seeds, pumpkin seeds, sunflower seeds, chili powder and salt until they’re ground course. This combination offers monstrously high levels of zinc, magnesium and healthy fats that animal proteins can’t even come close to.

Step 2: Take the time to chop up all your ingredients, such as the onions, chili and cabbage. The thinner the cabbage, the easier it will be to chew. It’s worth it because it’s high in vitamin A and K that’ll help give you stronger bones.

Step 3: In a mixing bowl, combine red onion, chili pepper, purple cabbage, cilantro, lime-juice, oil and salt. All of these ingredients will serve up a tangy flavor that’ll keep you coming back for more. Plus, they’re all incredible weight loss aids.

Step 4: Unravel the larger collard leaves and spread them flat, ready to fill. You can use regular wheat flour wraps if you desire, but be sure to place the collards on their bases because these leaves are incredibly rich in vitamins A and C that’ll aid exercise recovery.

Step 5: Start packing the wraps with ingredients such as avocado, salsa, brown rice, nut mixture and cabbage slaw. The brown rice is an excellent energy source that’ll not only keep you feeling full but will fuel the sweat of your workouts.
