This might be missing the rum of your local bartender’s mojito, but it still definitely packs a punch. This juice is sure to put some pep in your step on the way to the gym.
If you’re still unsure about the goodness of the green juice movement this is the recipe to convert you. We’ve even given you instructions on how to make it without a juicer, although we are convinced you’ll want to invest in one just so you can start every day the Day-O way thanks to this Cuban- inspired concoction.
If the name mojito comes from the African word mojo to ‘place a spell’ – consider yourself spellbound.
Ingredients (serves 2)
- 1 cucumber
- 1 Granny Smith apple
- 1â„4 fresh pineapple
- 2 tbsp mint leaves
- 1 kale leaf
- 1 lime
- 2 tsp agave syrup
Method
If you have a juicer, toss all the fruit and veg in and add the agave syrup to the serving glass. If you don’t have a juicer, no worries: you can cheat!
Step 1: Cut the ends off the cucumber and peel.
Step 2: Peel and core the Granny Smith apple.
Step 3: Cut away the outside of the pineapple and the tough center core.
Step 4: Cut away the center rib from the kale leaf.
Step 5: Cut off the lime peel and white pith.
Step 6: Add a half cup of water to aid in the mixing process and blitz everything in a blender for a few minutes; you want it very fine.
Step 7: Strain the mixture through a fine sieve. Add to a glass and mix in the agave syrup.
