Apple and Blackberry Crumble Recipe

Cold weather cries out for comforting, homemade desserts that warm the stomach and the soul. This apple and blackberry crumble is packed with nourishing ingredients including the fruits, nuts and oats.

The sweet taste comes from coconut palm sugar which has a lower glycemic index than regular table sugar.

It’s easy to make and is perfect to whip up ahead of guests coming round on a frosty evening!

 

You’ll Need

  • 1 cup oat flour
  • 1 cup minute oats
  • 1⁄2 cup coconut palm sugar
  • 1⁄4 cup finely chopped pecans
  • 1 tbsp ground cinnamon
  • 1⁄2 tsp salt
  • 1⁄2 tsp vanilla extract
  • 1⁄4 cup Earth Balance dairy free spread

Filling

  • 4 large apples
  • 6oz blackberries
  • 3 tbsp coconut palm sugar
  • 3fl oz lemon juice
  • 2 tbsp ground cinnamon

 

Method

Step 1: Peel and core apples, then cut into quarter-inch slices.

Step 2: For the filling, mix the apples, blackberries, cinnamon, coconut palm sugar and lemon juice in a bowl.

Step 3: In a separate bowl, mix oat flour, minute oats, coconut palm sugar, pecans, cinnamon and salt with a spoon. Next, add Earth Balance spread and vanilla. Use a fork to mash the Earth Balance into the dry ingredients.

Step 4: Preheat your oven to 350 ÌŠF.

Step 5: Prepare ramekins by spraying them with coconut oil. Fill each 7oz ramekin with an equal amount of filling. Then pour crumble over the top. Bake on the center rack at 350 ÌŠF for 60 minutes. Serve warm or cold.
